Counter Gremlins


When this posts, I'll be cooking. I should start Wednesday morning with dough making, pie baking, side dish prepping and general clean up so that Thursday all I have to do is ...well...everything else. I love to cook, I actually look forward to these holiday meals more than you could possibly imagine.
The cooking bug...it's viral around here. Layla already has it and it doesn't matter if I am scrambling eggs or prepping for dinner guests... my little helper becomes a counter gremlin until I let her help. If I don't let her help she'll lay across the counter and watch me like I'm doing my own cooking show.
I usually let her help.
Anyah already loves to watch us cook and I know by this time next year I'll have two counter gremlins. Which I guess means that in a few years I won't have to peel my own potatoes anymore, gotta love that.

Plus, worse things could happen then spending time teaching your kids an awesome skill and bonding together... I mean she could like golf...*yuck*

Great Grandpa Kenneth Turns 80


Tonight we'll be at a party for this Great Grandpa's 80th Birthday. This picture was taken during our visit with him yesterday. They were both rather smitten with each other.


An 80th Birthday Party in these parts means a 100 person outside BBQ in 97 degree heat and little shade and an open bar. We won't be drinking though being as we've decided to take the LaylaBug with us so everyone can see her. I'll post more pictures from the party tomorrow.
There is my super secret (not anymore) Shrimp Cocktail Sauce Recipe up over at Fat Girl Eats to keep everyone busy while we're out at the BBQ.

It's like working at the Food Network

Today the hubby and I are getting ready for the Fourth of July. We've got fireworks ready to light and booze in the fridge getting it's chill on. The hubby mopped the floor and entertained the baby and I got a head start on cooking.

I made Jon's mom's tuna macaroni salad (but I used mini Farfalle), I made brocolli salad, pretzel salad, new potato salad, and deviled eggs. I also prepped a veggie tray, a Courtney Corn Casserole and I have the stuff ready to make Lazy Housewives Cobbler and Chocolate Brownies.

Jon and I will also be having BBQ chicken but it's a bring your own meat BBQ so I don't have to worry about prepping for a large load of carnivores. By eliminating the meat from my budget, already having food on stock and having a lot of the salad stuff already we'll be having a party for around $60. That includes the $35 fireworks.

I'm very excited about Layla's first fourth of July and I'll make sure I take lots of pictures for her site.

Fat Girl Eats


I read several recipe blogs and I read cook books like novels and for the last couple years I've been experimenting with tastes of my own. For that reason I've started another little blog called Fat Girl Eats where you can get a look at the sort of things we're trying out at our house.
It'll keep all the "foodie" talk off this blog and put it someplace where only the people interested in it can go to look for it. My first food post will go up this afternoon/evening depending on whether or not my child ever really takes a nap.

When Potlucks Grow Up

I have been giving a lot of thought to starting a food club. The food network did a whole special before Christmas on groups of people who got together every month for the sole purpose of loving food and cooking. Gee...that sounds like my kind of gig doesn't it.

So I think I might start one and invite my family & friends. Anyone young or old could participate. It's like a potluck with cool monthly themes. Like for instance one month could be Greek food or Spanish food... oh or comfort food...

So what I'm looking for is some themes... and of course willing participants.

Anyone out there want to eat?

Cooking in Crisis

My grandmother was a traditional old southern woman. When something went wrong you got a stiff drink and some good advice. When something went worse you got some company, prayers and the occassional helpful errand. When something went into crisis you got food, lots and lots of it. Good food. Stick to your ribs, lick it off your fingers, "darlin' we're gonna need some more whipping cream and another cup of coffee", bad for your diet good for your soul food.

Perhaps that's how I became a curvy woman. I associate food with so many things. I celebrate life with side dishes and mourn with the richest of desserts. The main thing that makes my comfort zone though isn't the casseroles brought over with love or the trips to a restraunt to share the big news.

For me, the love of food comes from making it. When I am sad and loss has gripped me I want nothing more than to make big meals for the people I love. If I want to get to know someone really well I invite them in to chop and peel. For me, the kitchen is where life gets summed up. In my life, the process is what heals us.

Am I grieving? Would you know it? Or would you assume that you're coming over to dinner because we always do? There isn't really a way to tell. Perhaps it's in what I cook. More likely it's in what I leave behind.

Perhaps for me the best gift after mourning loss is someone to do the dishes and mop the floor because the hurricane of cooking usually destroys any sign of order in my kitchen. When I'm bitterly upset and the world seems cruel I usually crave the worst things possible. The kitchen is left with a litter layer of potato peels, white bread crust and mayo jars is often the last sign that I feel alone. But I'm not alone, after all the peeling and baking I'm with you...eating... and I've cooked my way through the crisis.

Below are two of my favorite crisis food recipes (don't judge me based on my crisis diet) & one recipe I love to take to other people:

Okie Potato Sandwich

Peel 4 large idaho potatos and slice in 1/8 inch wide pieces the long way (a potato cut correctly will look like a slice of baguette)
Peel 1 large white onion and slice into rings (like for a hamburger)
Peel 3 cloves of garlic and slice paper thin

In a hot skillet melt 1/4 cup of butter and 2 tablespoons of vegetable oil. Layer potatos on the bottom of the pan and cook until both sides are golden brown. Then saute onions and garlic until tender.

Serve on white bread with the crusts cut off with ketchup.

Cream Tuna on Toast

In a medium heat large skillet place 2 tablespoons of butter, 1 chopped red onion, 2 cans of tuna and 1 clove of minced garlic. saute until onions are tender and tuna is slightly brown. Add 2 cans of Campbell's cream of mushroom soup (don't be cheap Campbells is the best) and one can of milk. Stir until cream sauce is heated thoroughly (it will be thick like gravy) serve over toasted bread.

Funeral Chicken (a name given to this recipe by my Great Aunt Jewel)

In a pan place a whole chicken.

In a bowl combine 1 cup fresh lemon juice (keep the rind and left overs), 2 minced garlic cloves, 2 tablespoons fresh rosemary and 1/4 of olive oil.

Pour the mixture all over the chicken, including the inside. Place 4 sprigs of rosemary, 2 garlic cloves and the left over lemon parts inside the chicken cavity.

Cover with foil and back at 325 until done.

Place chicken on a platter surrounded by rosemary sprigs and slices of lemon. Cover and take to the person who needs it. Usually I put mine in a basket with a bottle of wine, a bag of salad greens with some bleu cheese dressing and a baguette. Chicken will keep in the fridge for 5 days.

Monday's Joy (day 8)


Ahh the joy of guilt...err... I mean candies. So far I've made fudge, peppermint bark, peanut butter fudge, cowboy cookies, rum balls and peanut butter kiss cookies.

Still on the list...sugar cookies, a pie for Christmas and possibly some chocolate chip cookies.

Mission Monday

So today is all about recipes over at Mom to the Screaming Masses blog. I'm truly thankful for Mission Monday today because I am tired and cranky. It hasn't been a good work day. This of course means that I am more than happy to spend part of my work day typing recipes into my blog. Here are 3 of my favorite recipes for Autumn/Thanksgiving. All of these recipes are extremely kid cook friendly. So enjoy making someone else do the work for a change.

Sweet Potato Soup

Boil 6 cups sweet potatos till fork tender. Drain & Mash. (Set aside)
In the pan you used to boil the sweet potatos melt 3 tablespoons of butter & combine with 3 tablespoons of flour to make a rou. Add 4 cups of cream (or skim milk if you are on a diet or soy milk if you're into soy) and stir till even & simmer for 5 minutes. Stir in 1/2 cup brown sugar (or 1/4 cup maple syrup) & 1/2 teaspoon salt, pepper, nutmeg and cinnamon. Fold sweet potatos into mixture and let simmer 2-4 minutes. If your kids are into things with texture you can add some roasted nuts to the top of this for garnish, I've also used dried fruits (like cranberries) as a colorful garnish for dinner parties.

Crunched Cranberry Classic

In a food processor combine 1 bag cranberries, 1 jar rasberry perserves, 1 tables spoon fresh grated ginger, 1/4 cup of orange juice, 1 tablespoon orange zest, 1 apple cored & chopped. Pulse till the consistancy of relish. Take one can of biscuits. Squish each biscuit into a muffin tin to make a cup. Fill with cranberry relish mixture and bake according to biscuit can (or until biscuit is golden brown). Top with whip cream and some pecans. Yummy.

Stuffed Apples

Core 4 apples. Mix in a bowl- 1/2 cup crumbled pumpkin muffins, 1/4 cup raisins, 1/2 cup brown sugar and 1 cup apple juice. Put mixture into cored apple centers. Bake in oven until apples are fork tender. Serves 4-8 people depending on how much gluttony runs in your family.
